Walnut Whipped Cream

This walnut whipped cream recipe is a crowd pleaser and a delicious replacement for traditional whipped cream. The taste is light and surprisingly, a very good whipped cream substitute. It combines well with protein foods and fruit, especially berries.

Preparation time

  • 8 – 12 hours to soak the walnuts, 10 minutes to prepare

Ingredients

  • 3 cups walnuts, soaked overnight – *** It is very important that the walnuts be soaked and wet (not dry or dehydrated) for this recipe. If the walnuts are dry or dehydrated, it can easily turn into walnut butter and have a denser consistency
  • 3 Tbs. coconut oil
  • 1 TBL ghee (or substitute with coconut oil or coconut butter)
  • 2 TBL vanilla extract
  • 1/3 cup organic or real maple syrup, or 2 -3 TBL raw honey. (Other alternative sweetener options if you digest them well: 1/3 cup organic erythritol or xylitol (made from birch). You can get the erythritol and birch xylitol at www.globalsweet.com – taste after blending and add more if you like it sweeter. Avoid these if you are following GAPS or SCD or any SIBO diet and use the maple syrup or honey instead.).
  • 1 tsp sea salt

Preparation

  • Soak your walnuts the night before by putting them in a glass container. Add in enough filtered water to cover the walnuts and then add in 1 tsp sea salt. Mix up and put a lid on the container. Leave on your counter top for 8 – 12 hours. This removes anti-nutrients that make nuts hard to digest. Drain and rinse, then use in your recipe!
  • Add walnuts, coconut oil, vanilla, sweetener, and ghee into your food processor with S-blade or blender and blend up completely.
  • Depending upon your blender or food processor, you may want to add a little water to get things blending smoothly. Start with 2 TBL of water and add more if needed. You likely won’t need more than ¼ cup water. If you have a high speed blender, like a Vitamix, you may only need 1 TBL or less of water.
  • Remove to a bowl and allow to chill thoroughly (about 30 minutes). This mixture can get a little stiff in the refrigerator, so you may want to remove for 15 – 30 minutes before serving, unless you want a stiffer consistency.

Serving Suggestion

  • Serve over berries, like strawberries, blueberries, black berries and/or raspberries.

Delicious Alternatives

  • Serve as “ice cream” – just let it sit longer in the refrigerator.
  • Form into cookie shapes and dehydrate for 8 – 12 hours on 115 Degrees for a cookie that tastes like sugar cookies.
