Gluten Free Dark Chocolate Brownies

(After you make almond milk at home, you can use your extra almond pulp in this recipe — how cool is that?)

And, you’ll have gluten free dark chocolate brownies when you’re done. Double Bonus!

Ingredients

  • 5 TBL raw cacao powder
  • 1/2 cup organic coconut oil
  • 1 cup dates with 1/4 cup water (in a saucepan, heat the dates up in the water for 3 minutes and use both dates and water in the recipe. Or as an alternative, use 1 cup honey)
  • 1 cup almond meal from your almond milk (leftover wet pulp) or 3/4 cup almond flour  and 1/4 cup water if you do not have pulp
  • 1/2 cup coconut flour (or 1 cup finely shredded coconut flakes)
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon baking soda (optional…if you want fluffier brownies, use this)
  • 2 organic free-range eggs, beaten
  • 1 tablespoon vanilla extract

Optional

  • 1/2 cup chopped pecans or walnuts, if desired (I like to soak them for 8 – 12 hours first, so they are more easily digestible)

Instructions

  • Preheat the oven to 350ºF. Line an 8×8-inch square baking pan with parchment paper (or use a silicone bread loaf pan greased with coconut oil)
  • In a food processor, put in your dates and water with the S-blade and mix until they are pureed. Then add in the almond meal, cacao powder, coconut flour, fine sea salt and baking soda and process until mixed. Then add the eggs, vanilla extract and coconut oil and process until all ingredients are mixed together. Mix until the batter thickens and becomes smooth and glossy.
  • If you are adding nuts, stir in the nuts by hand and spread the batter into the prepared baking pan. Even out the batter with a silicone spatula.
  • Bake in the center of a preheated 350ºF oven for 32 to 35 minutes, or until the brownies are set.
  • Cool on a wire rack; and remove the cooled brownies from the pan by gripping the parchment paper edges and lifting the brownies out as a whole.
  • Chill for an hour before cutting. (Though warm and gooey is really divine, if you don’t mind them falling apart.)
